Again – So that it’s said and everyone knows, I am a Pinterest addict. I love Pinterest. I have found so many great projects and amazing recipes.
The other night I found a recipe that I thought looked interesting – it had all the things my husband loves: cheese, cauliflower, and ground beef.
I found this chicken recipe on Pinterest and it was pinned from http://healthylowcarbliving.com. The name of the recipe is Cheeseburger Cauliflower.
The original ingredients called only for ground beef, cauliflower, garlic salt, and cheese. I amped it up a little bit which gives it the “chili” in my title. I added more veggies (corn and onions) as well.
Here is my recipe version.
Ingredients:
- 1 lb lean ground beef
- 1 tablespoon extra virgin olive oil (i really wanted to pull a Rachel Ray here and just say “EVOO“)
- 1 head of cauliflower (cut up in 1 inch pieces)
- 1 cup Mexican mix shredded cheese
- 1 cup frozen corn
- 1 Vidalia onion (diced)
- 3 tablespoons Chili Powder
- 1 tablespoon Cumin
- 1/2 teaspoon garlic salt
- fresh cracked pepper – (Pampered Chef Peppercorn Medley)
- salt to taste – (Pampered Chef Corse Sea Salt & Himalayan Salt)

Mix-N-Mash
