Again – So that it’s said and everyone knows, I am a Pinterest addict. I love Pinterest. I have found so many great projects and amazing recipes.
The other night I found a recipe that I thought looked interesting – it had all the things my husband loves: cheese, cauliflower, and ground beef.
I found this chicken recipe on Pinterest and it was pinned from http://healthylowcarbliving.com. The name of the recipe is Cheeseburger Cauliflower.
The original ingredients called only for ground beef, cauliflower, garlic salt, and cheese. I amped it up a little bit which gives it the “chili” in my title. I added more veggies (corn and onions) as well.
Here is my recipe version.
1. Heat 12 inch skillet
on medium high heat with olive oil. Add ground beef.
2. Add Chili Powder, Cumin, Garlic Salt
, and Pepper. Use mix-n-chop
to break up ground beef and incorporate spices.
4. Heat saucepan to medium high and add cauliflower. Cover and cook for 10 minutes.
5. Once the beef has browned in the skillet, add the corn and diced onion. Cook for approximately 5 minutes.
6. When the cauliflower is done cooking, drain the water and mash the cauliflower slightly using a mix-n-masher
. Add the cauliflower to the skillet beef mixture.
7. Add salt to taste. Mix in cheese.
8. Ready to serve once cheese is melted and incorporated. Serve with Salad on the side.
It was absolutely delicious. When I came downstairs from my office the next day and looked in the refrigerator (around 2pm) I noticed the leftovers were gone. I could have killed my husband for some of those leftovers!!!
By the way, I’m sure you are wondering – what the heck is a Mix-n-Masher or a Mix-n-Chop??? These are my two all time favorite Pampered Chef tools. They are amazing – see the pictures below. Once you try these, you’ll be amazed. The mix-n-chop is awesome for breaking up your ground meat perfectly and the mix-n-masher is useful for everything – mashed potatoes, mashed cauliflower, guacamole, etc.
